I don’t know if the bananas I buy are turning brown too quickly, or if I am not eating them as fast as I thought; Either way, I have been making a lot of banana bread lately. That is why I thought I would post one of the recipes that I used.
Ingredients:
- 1 1/2 cup whole-wheat flour
- 1/2 teaspoon baking soda
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/4 teaspoon of cinnamon
- 3 ripe bananas
- 1/4 cup sour cream or yogurt
- 1/2 cup honey
- 2 eggs
- 1/3 cup coconut oil
- 1 teaspoon vanilla
- 1/4 cup chopped walnuts
Directions:
- Preheat oven to 325 degrees
- Oil bread pan
- Beat eggs, sour cream (or yogurt), bananas, oil, and vanilla together
- Mix all dry ingredients in separate bowl
- Combine all ingredients, then add the walnuts
- Stir together, then add to pan and bake for 45 minutes
